Ingredients (Serves 2)
300g chicken breast, diced
Juice of ½ a lemon
2 tbsps plain yoghurt (use dairy free if preferred)
½ tsp ground turmeric
3 garlic cloves, minced
½ tsp dried red chilli flakes
½ tsp sea salt
120g green bell-pepper, deseeded and quartered
60g brown onion, peeled and quartered
2 tsps olive oil

Preparation
Pre-soak 4 bamboo skewers in water for 30 minutes, or prepare 4 metal skewers
Place the chicken, lemon juice, yoghurt, turmeric, garlic, chilli flakes, and salt in a bowl. Stir well
Thread the chicken, bell-pepper and onion onto the skewers, alternating as you go
Heat the oil in a wide-based frying pan over a medium flame
Add the skewers and cook on each side for 4 minutes, or until thoroughly cooked
