Persian Chicken Kebabs

Ingredients (Serves 2)

  • 300g chicken breast, diced

  • Juice of ½ a lemon

  • 2 tbsps plain yoghurt (use dairy free if preferred)

  • ½ tsp ground turmeric

  • 3 garlic cloves, minced

  • ½ tsp dried red chilli flakes

  • ½ tsp sea salt

  • 120g green bell-pepper, deseeded and quartered

  • 60g brown onion, peeled and quartered

  • 2 tsps olive oil

Nutrition

  • Per Serving: 263 Calories, 12g Carbs, 38g Protein, 7g Fat

Preparation

  • Pre-soak 4 bamboo skewers in water for 30 minutes, or prepare 4 metal skewers

  • Place the chicken, lemon juice, yoghurt, turmeric, garlic, chilli flakes, and salt in a bowl. Stir well

  • Thread the chicken, bell-pepper and onion onto the skewers, alternating as you go

  • Heat the oil in a wide-based frying pan over a medium flame

  • Add the skewers and cook on each side for 4 minutes, or until thoroughly cooked
