Superfood Oats

Ingredients (Serves 1)

  • 60g jumbo oats (use gluten free if preferred)

  • 150ml unsweetened almond milk (or milk of your choice)

  • 60g sweet apple, finely chopped

  • 1 tsp chia seeds

  • 1 tbsp ground flaxseed

  • 2 tsps tahini (optional)

  • 1/2 tsp ground cinnamon

For the toppings:

  • A handful of blackberries or blueberries

  • 2 tsps maple syrup

  • A few slices of banana

  • 1/2 tsp coconut flakes

Nutrition

  • Per Serving: 477 Calories, 69g Carbs, 12g Protein, 17g Fat

Preparation

  • Place the milk and oats in a saucepan over a medium flame

  • Stir well and cook for 3-4 minutes, stirring occasionally until thick

  • Add more milk during cooking time if the mixture becomes too dry

  • Add the apple, stir well and cook for 2 minutes

  • Turn off the heat and stir in the chia seeds and flaxseed

  • Leave to stand for 5 minutes

  • Stir in more milk if desired

  • Stir in the tahini (if using) and cinnamon

  • Add the toppings and serve
