Mediterranean Egg Salad

Ingredients List (Serves 1)

  • 3 eggs, hard boiled and roughly chopped

  • 50g Greek yoghurt (use dairy free if preferred)

  • 1⁄4 tsp ground cumin

  • 1⁄4 tsp dried oregano

  • A pinch of ground black pepper

  • 2 tsps lemon juice

  • A pinch of sea salt

  • 20g green or black pitted olives, sliced

  • 30g sun-dried tomatoes, chopped

  • 1⁄2 tsp Dijon or wholegrain mustard

  • 80g cucumber, chopped

To Serve

  • A handful of mixed lettuce leaves

  • 4 cherry / plum tomatoes, halved

Nutritional Info

  • Per serving: 477 calories, 29g fat, 27g carbs, 27g protein

Preparation Instructions

  • Place the chopped eggs in a large bowl

  • Add the yoghurt, sun-dried tomatoes, dried herbs and spices, olives, mustard, lemon juice and cucumber

  • Stir well

  • Serve on a bed of lettuce leaves and cherry tomatoes

  • Store any leftovers in an airtight container and refrigerate for up to 2 days
