Ingredients List (Serves 1)
3 eggs, hard boiled and roughly chopped
50g Greek yoghurt (use dairy free if preferred)
1⁄4 tsp ground cumin
1⁄4 tsp dried oregano
A pinch of ground black pepper
2 tsps lemon juice
A pinch of sea salt
20g green or black pitted olives, sliced
30g sun-dried tomatoes, chopped
1⁄2 tsp Dijon or wholegrain mustard
80g cucumber, chopped
To Serve
A handful of mixed lettuce leaves
4 cherry / plum tomatoes, halved

Preparation Instructions
Place the chopped eggs in a large bowl
Add the yoghurt, sun-dried tomatoes, dried herbs and spices, olives, mustard, lemon juice and cucumber
Stir well
Serve on a bed of lettuce leaves and cherry tomatoes
Store any leftovers in an airtight container and refrigerate for up to 2 days
