Ingredients List (Serves 1)
60g halloumi cheese, sliced
70g ripe avocado
Juice of 1⁄2 a lime
A pinch of paprika
1 tbsp fresh coriander, finely chopped

Preparation Instructions:
Prepare a medium grill. Place the halloumi slices on a grill tray lined with tin foil
Grill for around 5 minutes on each side, or until golden
Mash the avocado in a bowl with the lime juice, coriander and paprika
Transfer the cheese to a plate
Top with the avocado smash
Consume immediately
Serving suggestion:
Serve on a slice of toasted rye, sourdough or gluten free bread with a spread of butter
Or with steamed vegetables of your choice
