Halloumi With Avocado Smash

Ingredients List (Serves 1)

  • 60g halloumi cheese, sliced

  • 70g ripe avocado

  • Juice of 1⁄2 a lime

  • A pinch of paprika

  • 1 tbsp fresh coriander, finely chopped

Nutrition Info:

  • Per serving (halloumi and avocado smash): 378 calories 30g fat, 12g carbs, 15g protein

Preparation Instructions:

  • Prepare a medium grill. Place the halloumi slices on a grill tray lined with tin foil

  • Grill for around 5 minutes on each side, or until golden

  • Mash the avocado in a bowl with the lime juice, coriander and paprika

  • Transfer the cheese to a plate

  • Top with the avocado smash

  • Consume immediately

Serving suggestion:

  • Serve on a slice of toasted rye, sourdough or gluten free bread with a spread of butter

  • Or with steamed vegetables of your choice
