Feta, Pepper And Spinach Muffins

Ingredients (Makes 6)

  • 2 tsps avocado or coconut oil, to grease tin

  • 4 eggs

  • 2 egg whites

  • ½ tsp sea salt

  • ½ tsp ground black pepper

  • ½ tsp dried oregano

  • ½ tsp paprika

  • Small handful of spinach leaves, finely chopped

  • 80g red bell pepper, finely diced

  • 40g feta cheese, crumbled or cut into small cubes (use dairy free if preferred)

Nutrition

  • Per muffin: 99 Calories, 7g Protein, 2g Carbs, 7g Fat

Preparation

  • Preheat oven to 180°C/350°F.

  • Grease six compartments of a muffin tin with avocado or coconut oil.

  • Crack the eggs and egg whites into a jug and beat with a fork.

  • Add the seasonings and stir well.

  • Add the remaining ingredients, except for the feta cheese and stir gently.

  • Pour the mixture into the muffin tin compartments.

  • Sprinkle the feta cheese over the muffins.

  • Bake for 20 minutes, or until golden.
