Ingredients (Makes 6)
2 tsps avocado or coconut oil, to grease tin
4 eggs
2 egg whites
½ tsp sea salt
½ tsp ground black pepper
½ tsp dried oregano
½ tsp paprika
Small handful of spinach leaves, finely chopped
80g red bell pepper, finely diced
40g feta cheese, crumbled or cut into small cubes (use dairy free if preferred)

Preparation
Preheat oven to 180°C/350°F.
Grease six compartments of a muffin tin with avocado or coconut oil.
Crack the eggs and egg whites into a jug and beat with a fork.
Add the seasonings and stir well.
Add the remaining ingredients, except for the feta cheese and stir gently.
Pour the mixture into the muffin tin compartments.
Sprinkle the feta cheese over the muffins.
Bake for 20 minutes, or until golden.
