Easy Chia Protein Pudding

Ingredients (Serves 1)

  • 3 tbsps chia seeds

  • 130ml unsweetened almond milk (or use milk of your choice)

  • 25g vanilla flavour whey or plant-based protein powder

  • ½ tsp vanilla extract

For The Toppings

  • 60g Greek yoghurt (use dairy free if preferred)

  • 40g fresh berries of your choice

  • 2 tsps low sugar granola or muesli

Nutrition

  • Per serving: 306 calories, 33g protein, 12g carbs, 14g fat

Preparation

  • Place the ingredients in a bowl. Stir well.

  • Cover and refrigerate for 2 hours minimum (overnight if preferred).

  • Add more milk if the mixture is too thick and stir well.

  • Serve topped a layer of yoghurt, fresh berries and granola.
