Chicken And Veg Soup (Slow Cooker)

Ingredients (Serves 4)

  • 250g brown onion, chopped

  • 250g carrots, peeled and sliced

  • 200g dried red lentils, rinsed

  • 230g (drained weight) tinned chickpeas, rinsed and drained

  • 300g white potatoes, peeled and chopped

  • 600g skinless boneless chicken thighs

  • 1.2 litres vegetable stock

  • 1 tsp ground black pepper

  • A sprinkle of fresh parsley to serve (optional)

Nutrition

  • Per serving: 438 calories, 39g protein, 39g carbs, 14g fat

Preparation

  • Place the ingredients into your slow cooker dish. Stir well.

  • Cook on a low setting for 7-8 hours.

  • Taste and add more seasoning if required.

  • Serve garnished with parsley, if desired.
