Ingredients (Serves 4)
250g brown onion, chopped
250g carrots, peeled and sliced
200g dried red lentils, rinsed
230g (drained weight) tinned chickpeas, rinsed and drained
300g white potatoes, peeled and chopped
600g skinless boneless chicken thighs
1.2 litres vegetable stock
1 tsp ground black pepper
A sprinkle of fresh parsley to serve (optional)

Preparation
Place the ingredients into your slow cooker dish. Stir well.
Cook on a low setting for 7-8 hours.
Taste and add more seasoning if required.
Serve garnished with parsley, if desired.
