Ingredients (Serves 2)
1 tsp avocado oil
300g sirloin steak, visible fat removed
30ml soy sauce or tamari
15ml sweet chilli sauce
10ml rice wine vinegar
5-10ml sriracha sauce or tabasco
120g (dry weight) ramen noodles
1 tbsp sesame oil
1 spring onion, sliced
50g red bell pepper, sliced
2 tsps fresh ginger, grated
2 garlic cloves, minced
To serve: a sprinkle of sliced spring onion

Preparation
Heat the avocado oil in a frying pan over a medium flame.
Add the steak and season with salt and pepper. Fry according to packet instructions.
Transfer to a plate and leave to rest for five minutes then slice.
Place the soy sauce, sweet chilli sauce, rice wine vinegar, maple syrup and sriracha sauce in a bowl and stir. Set aside.
Cook the noodles according to packet instructions. Rinse under cold running water and drain well. Set aside.
Heat the sesame oil in a large frying pan or wok over medium flame. Add the spring onion and stir fry for one minute.
Add the bell pepper and stir fry for three minutes.
Add the garlic and ginger and stir fry for one minute.
Stir in the noodles and stir well.
Add the sauce and stir fry for 2-3 minutes.
Serve topped with the sliced steak.
