Easy Spicy Ramen

Ingredients (Serves 2)

  • 1 tsp avocado oil

  • 300g sirloin steak, visible fat removed

  • 30ml soy sauce or tamari

  • 15ml sweet chilli sauce

  • 10ml rice wine vinegar

  • 5-10ml sriracha sauce or tabasco

  • 120g (dry weight) ramen noodles

  • 1 tbsp sesame oil

  • 1 spring onion, sliced

  • 50g red bell pepper, sliced

  • 2 tsps fresh ginger, grated

  • 2 garlic cloves, minced

  • To serve: a sprinkle of sliced spring onion

Nutrition

  • Per serving: 682 calories, 51g protein, 52g carbs, 30g fat

Preparation

  • Heat the avocado oil in a frying pan over a medium flame.

  • Add the steak and season with salt and pepper. Fry according to packet instructions.

  • Transfer to a plate and leave to rest for five minutes then slice.

  • Place the soy sauce, sweet chilli sauce, rice wine vinegar, maple syrup and sriracha sauce in a bowl and stir. Set aside.

  • Cook the noodles according to packet instructions. Rinse under cold running water and drain well. Set aside.

  • Heat the sesame oil in a large frying pan or wok over medium flame. Add the spring onion and stir fry for one minute.

  • Add the bell pepper and stir fry for three minutes.

  • Add the garlic and ginger and stir fry for one minute.

  • Stir in the noodles and stir well.

  • Add the sauce and stir fry for 2-3 minutes.

  • Serve topped with the sliced steak.
