Ingredients (Serves 1)
½ tsp olive oil
¾ tsp Cajun seasoning
¼ tsp ground cumin
¼ tsp hot chilli powder
180g boneless cod or haddock fillet
10g mayonnaise
2 tsps cold water
Juice of 1 lime
100g red or white cabbage, shredded
50g carrot, coarsely grated
½ tsp extra-virgin olive oil
A pinch of sea salt
A small handful of coriander, chopped
A small handful of spinach leaves
30g red bell-pepper, sliced
20g cucumber, sliced

Preparation
Lightly cover / spray the fish with olive oil
Mix the Cajun seasoning, cumin and chilli powder in a bowl
Rub the spices into the fish using the back of a spoon
Place the mayonnaise, water and lime juice in a bowl and stir well
Preheat your air fryer or lightly spray / cover a skillet with olive oil
Air fry the fish for 6 minutes at 200˚C/400˚F or fry over a medium flame for 6-8 minutes
Meanwhile, place the cabbage and carrot in a bowl
Add the extra-virgin olive oil, remaining lime juice and salt and stir well
Place the fish and cabbage in a bowl
Add the coriander, spinach, pepper and cucumber
Top with the dressing
