Spicy Fish With Slaw

Ingredients (Serves 1)

  • ½ tsp olive oil

  • ¾ tsp Cajun seasoning

  • ¼ tsp ground cumin

  • ¼ tsp hot chilli powder

  • 180g boneless cod or haddock fillet

  • 10g mayonnaise

  • 2 tsps cold water

  • Juice of 1 lime

  • 100g red or white cabbage, shredded

  • 50g carrot, coarsely grated

  • ½ tsp extra-virgin olive oil

  • A pinch of sea salt

  • A small handful of coriander, chopped

  • A small handful of spinach leaves

  • 30g red bell-pepper, sliced

  • 20g cucumber, sliced

Nutrition

  • Per Serving: 357 Calories, 26g Carbs, 34g Protein, 13g Fat

Preparation

  • Lightly cover / spray the fish with olive oil

  • Mix the Cajun seasoning, cumin and chilli powder in a bowl

  • Rub the spices into the fish using the back of a spoon

  • Place the mayonnaise, water and lime juice in a bowl and stir well

  • Preheat your air fryer or lightly spray / cover a skillet with olive oil

  • Air fry the fish for 6 minutes at 200˚C/400˚F or fry over a medium flame for 6-8 minutes

  • Meanwhile, place the cabbage and carrot in a bowl

  • Add the extra-virgin olive oil, remaining lime juice and salt and stir well

  • Place the fish and cabbage in a bowl

  • Add the coriander, spinach, pepper and cucumber

  • Top with the dressing
