Smashed Butter Beans On Sourdough

Ingredients (Serves 1)

  • 1 tsp olive oil

  • 30g red onion, finely chopped

  • 1 garlic clove, minced

  • 1/4 tsp Italian seasoning

  • 1/4 tsp smoked paprika

  • 1/4 tsp ground cumin

  • 1/4 tsp garam masala

  • 120g tinned butter beans, rinsed and drained

  • 150g tinned chopped tomatoes

  • 1/4 tsp sea salt

  • 1/4 tsp ground black pepper

  • 90g sliced sourdough toast

  • A sprinkle of fresh coriander, finely chopped (optional)

Nutrition

  • Per Serving: 427 Calories, 69g Carbs, 22g Protein, 7g Fat

Preparation

  • Heat the olive oil in a saucepan over a medium flame.

  • Add the onion and fry for 4-5 minutes, stirring frequently until soft

  • Add the garlic, Italian seasoning, paprika, cumin and garam masala

  • Cook for 3 minutes, stirring occasionally

  • Add the butter beans, chopped tomatoes, salt and pepper

  • Bring to a boil then reduce heat and simmer for 8-10 minutes, stirring occasionally

  • Mash the beans lightly with the back of a spoon, if desired

  • This will create a thicker sauce

  • Serve on sourdough toast and garnish with coriander (if using)
