Ingredients (Serves 1)
1 tsp olive oil
30g red onion, finely chopped
1 garlic clove, minced
1/4 tsp Italian seasoning
1/4 tsp smoked paprika
1/4 tsp ground cumin
1/4 tsp garam masala
120g tinned butter beans, rinsed and drained
150g tinned chopped tomatoes
1/4 tsp sea salt
1/4 tsp ground black pepper
90g sliced sourdough toast
A sprinkle of fresh coriander, finely chopped (optional)

Preparation
Heat the olive oil in a saucepan over a medium flame.
Add the onion and fry for 4-5 minutes, stirring frequently until soft
Add the garlic, Italian seasoning, paprika, cumin and garam masala
Cook for 3 minutes, stirring occasionally
Add the butter beans, chopped tomatoes, salt and pepper
Bring to a boil then reduce heat and simmer for 8-10 minutes, stirring occasionally
Mash the beans lightly with the back of a spoon, if desired
This will create a thicker sauce
Serve on sourdough toast and garnish with coriander (if using)
