Ingredients (Serves 4)
1 tsp coconut oil, to grease dish
4 eggs
A handful of cherry tomatoes
1 red or yellow bell-pepper, diced
50g tinned black beans or kidney beans, rinsed and drained
100g avocado, diced
1 tsp cayenne pepper
3/4 tsp dried oregano
A pinch of sea salt and ground black pepper

Preparation
Preheat oven to 180˚C/350˚F
Lightly grease the base and sides of a 7 x 7 inch ovenproof dish with coconut oil
Place all of the ingredients in a bowl and stir well until combined
Transfer to the dish
Bake for 25-30 minutes
Leave to cool in the tin for 5 minutes, then cut into 4 pieces and enjoy
