Mexican Frittata

Ingredients (Serves 4)

  • 1 tsp coconut oil, to grease dish

  • 4 eggs

  • A handful of cherry tomatoes

  • 1 red or yellow bell-pepper, diced

  • 50g tinned black beans or kidney beans, rinsed and drained

  • 100g avocado, diced

  • 1 tsp cayenne pepper

  • 3/4 tsp dried oregano

  • A pinch of sea salt and ground black pepper

Nutrition

  • Per Serving: 162 Calories, 9g Carbs, 8g Protein, 10g Fat

Preparation

  • Preheat oven to 180˚C/350˚F

  • Lightly grease the base and sides of a 7 x 7 inch ovenproof dish with coconut oil

  • Place all of the ingredients in a bowl and stir well until combined

  • Transfer to the dish

  • Bake for 25-30 minutes

  • Leave to cool in the tin for 5 minutes, then cut into 4 pieces and enjoy
