Crunchy Salmon And Chickpea Salad

Ingredients (Serves 2)

  • 200g baked salmon fillet

  • 120g tinned chickpeas, drained and rinsed

  • 100g avocado, diced

  • A large handful of fresh spinach leaves, chopped

  • 100g cherry tomatoes, halved

  • 150g cucumber, diced

  • 100g red onion, thinly sliced

  • A small bunch of fresh parsley or coriander, chopped

  • Juice of 1 lemon

  • A pinch of sea salt and ground black pepper

Nutrition

  • Per Serving: 401 Calories, 24g Carbs, 29g Protein, 21g Fat

Preparation

  • Assemble all of the ingredients into 2 serving bowls and serve
