Ingredients (Serves 3)
2 tsp ghee or avocado oil
350g stewing beef, diced
150g carrot, diced
1 small red onion, finely chopped
2 green finger chillis, finely chopped
3 garlic cloves, minced
1 red bell-pepper, deseeded and finely chopped
2 tbsps tomato purée
1 tbsp smoked paprika
1⁄2 tsp ground coriander
1 tsp dried oregano
500ml chicken or vegetable stock

Preparation
Heat the ghee/oil in a large saucepan over a medium flame
Add the beef and cook for 3-4 minutes, stirring until brown all over
Add the carrot and onion, stir well and fry for 3 minutes
Transfer the contents of the saucepan to your slow cooker dish
Add the remaining ingredients and stir well
Cook on a low setting for 5-6 hours
Taste and add salt and pepper, if desired
