Mexican Beef Soup

Ingredients (Serves 3)

  • 2 tsp ghee or avocado oil

  • 350g stewing beef, diced

  • 150g carrot, diced

  • 1 small red onion, finely chopped

  • 2 green finger chillis, finely chopped

  • 3 garlic cloves, minced

  • 1 red bell-pepper, deseeded and finely chopped

  • 2 tbsps tomato purée

  • 1 tbsp smoked paprika

  • 1⁄2 tsp ground coriander

  • 1 tsp dried oregano

  • 500ml chicken or vegetable stock

Nutrition

  • Per Serving: 273 Calories, 18g Carbs, 30g Protein, 9g Fat

Preparation

  • Heat the ghee/oil in a large saucepan over a medium flame

  • Add the beef and cook for 3-4 minutes, stirring until brown all over

  • Add the carrot and onion, stir well and fry for 3 minutes

  • Transfer the contents of the saucepan to your slow cooker dish

  • Add the remaining ingredients and stir well

  • Cook on a low setting for 5-6 hours

  • Taste and add salt and pepper, if desired
