Greek Salad With Grains

Ingredients (Serves 1)

  • 90g cooked grains e.g. Merchant Gourmet Glorious Grains

  • A small handful of spinach or rocket leaves

  • 60g cucumber, chopped or sliced

  • 100g vine-ripened tomatoes, halved

  • 50g feta cheese, crumbled or cut into cubes (use dairy free if preferred)

  • 30g pitted olives

For The Dressing:

  • 10ml extra-virgin olive oil

  • The juice of ½ a lemon

  • ½ tsp dried oregano

Nutrition

  • Per Serving: 373 Calories 26g Carbs, 11g Protein, 25g Fat

Preparation

  • To make the dressing, mix together the olive oil, lemon juice and oregano

  • Season with salt and pepper

  • Assemble the salad ingredients in a bowl and toss together

  • Drizzle the dressing over the top and serve
