Mackerel, Cumin And Pecan Salad

Ingredients List (Serves 1)

  • A large handful of mixed lettuce leaves

  • A handful of cherry tomatoes, halved

  • 100g smoked peppered mackerel fillet

  • 1/2 tsp cumin seeds

  • 10g pecan nuts

  • ¼ tsp sea salt

  • 2 tsps balsamic vinegar

  • 1 tsp extra virgin olive oil

Nutrition:

  • Per serving: 440 calories, 7g carbs, 22g protein, 36g fat

Preparation:

  • Assemble the lettuce, tomatoes, and mackerel in a bowl

  • Place a small frying pan over a medium/low flame

  • Add the cumin seeds, pecans and salt

  • Toast gently, stirring occasionally until fragrant

  • Sprinkle the toasted mixture over the salad

  • Drizzle the balsamic vinegar and oil over the top and serve
