Ingredients (Makes 5 Energy Balls)
80g cashews
45g desiccated coconut
25g vanilla flavour whey or rice protein powder
Juice of 1/2 a lemon
1 tbsp lemon zest, finely grated (use an unwaxed lemon)
1 tbsp chia seeds
For The Coating
20g desiccated coconut

Per Energy Ball: 200 Calories , 5g Carbs, 9g Protein, 16g Fat
Preparation
Place the cashews in a blender or food processor and process for 1 minute.
Transfer to a bowl and stir in the remaining ingredients.
If the mixture is too dry, add a drop of cold water to help the mixture bind.
Dampen your hands with cold water and roll into 5 balls.
Roll in the desiccated coconut and enjoy
