Lemon Cashew Energy Balls

Ingredients (Makes 5 Energy Balls)

  • 80g cashews

  • 45g desiccated coconut

  • 25g vanilla flavour whey or rice protein powder

  • Juice of 1/2 a lemon

  • 1 tbsp lemon zest, finely grated (use an unwaxed lemon)

  • 1 tbsp chia seeds

For The Coating

  • 20g desiccated coconut

Nutrition

  • Per Energy Ball: 200 Calories , 5g Carbs, 9g Protein, 16g Fat

Preparation

  • Place the cashews in a blender or food processor and process for 1 minute.

  • Transfer to a bowl and stir in the remaining ingredients.

  • If the mixture is too dry, add a drop of cold water to help the mixture bind.

  • Dampen your hands with cold water and roll into 5 balls.

  • Roll in the desiccated coconut and enjoy
