Leftover Turkey Wraps

Ingredients (Serves 4)

  • 500g roast turkey breast, chopped

  • 80g mayonnaise

  • 100g Greek yoghurt (use dairy free if preferred)

  • 2 tsps Dijon mustard

  • 1 tbsp lemon juice

  • 50g celery, finely diced

  • 50g spring onions, sliced

  • 2 tsps fresh dill, chopped

  • 50g dried cranberries

  • 35g pecan halves, lightly toasted

  • A pinch of sea salt and ground black pepper

  • Romaine lettuce leaves to serve

Nutrition

  • Per Serving: 444 Calories, 14g Carbs, 34g Protein, 28g Fat

Preparation

  • Place all of the ingredients in a large bowl and stir until combined

  • Taste and add more seasoning if desired

  • Wrap in lettuce leaves (or regular wraps) to serve
