Crunchy Winter Salad

Ingredients (Serves 2)

  • 40g pomegranate seeds

  • 25g pecan halves

  • 40g Feta, crumbled

  • 120g cucumber, diced

  • 150g curly kale, ribs removed and discarded

  • 30g red onion, sliced or chopped

For the dressing:

  • 1 tsp olive oil

  • 1 tsp dried parsley or mixed herbs

  • 1 tsp Dijon mustard

  • ΒΌ tsp sea salt

  • 2 tbsps white vinegar

  • β…› tsp ground black pepper

Nutrition

  • Per Serving: 212 Calories, 10g Carbs, 7g Protein, 16g Fat

Preparation

  • Mix the dressing ingredients in a jug

  • Assemble the salad ingredients between two bowls

  • Drizzle the dressing over the salad, toss lightly and serve
