Ingredients (Serves 2)
40g pomegranate seeds
25g pecan halves
40g Feta, crumbled
120g cucumber, diced
150g curly kale, ribs removed and discarded
30g red onion, sliced or chopped
For the dressing:
1 tsp olive oil
1 tsp dried parsley or mixed herbs
1 tsp Dijon mustard
ΒΌ tsp sea salt
2 tbsps white vinegar
β tsp ground black pepper

Preparation
Mix the dressing ingredients in a jug
Assemble the salad ingredients between two bowls
Drizzle the dressing over the salad, toss lightly and serve
