Ingredients (Serves 1)
2 slices sourdough bread (approximately 30g per slice)
60g ripe avocado, sliced
80g vine-ripened tomato, sliced
60g mozzarella ball, sliced (use dairy free if preferred)
1/2 tsp extra-virgin olive oil
1/2 tsp balsamic vinegar
4-5 fresh basil leaves
A pinch of sea salt and ground black pepper

Preparation
Toast the sourdough bread
Place one tomato slice on the very edge of each slice of toast
Overlap with a slice of mozzarella
Repeat until the tops of both slices of toast are covered
Add half of the avocado to each slice
Drizzle with olive oil and balsamic vinegar
Season with salt and pepper and top with fresh basil
