Caprese Toast

Ingredients (Serves 1)

  • 2 slices sourdough bread (approximately 30g per slice)

  • 60g ripe avocado, sliced

  • 80g vine-ripened tomato, sliced

  • 60g mozzarella ball, sliced (use dairy free if preferred)

  • 1/2 tsp extra-virgin olive oil

  • 1/2 tsp balsamic vinegar

  • 4-5 fresh basil leaves

  • A pinch of sea salt and ground black pepper

Nutrition

  • Per Serving: 435 Calories, 40g Carbs, 17g Protein, 23g Fat

Preparation

  • Toast the sourdough bread

  • Place one tomato slice on the very edge of each slice of toast

  • Overlap with a slice of mozzarella

  • Repeat until the tops of both slices of toast are covered

  • Add half of the avocado to each slice

  • Drizzle with olive oil and balsamic vinegar

  • Season with salt and pepper and top with fresh basil
