Berry Baked Oat Bar

Ingredients (Makes 9 Bars)

  • 2 eggs

  • 1 tsp vanilla extract

  • 30g vanilla flavour whey or rice protein powder

  • A pinch of sea salt

  • A pinch of baking powder

  • 100ml unsweetened almond milk (or use milk of your choice)

  • 1 heaped tsp ground cinnamon

  • 70g fresh strawberries, mashed

  • 260g oats (use gluten free if preferred)

  • 50g fresh blueberries

  • 1 small apple, peeled, cored and finely sliced

  • Per bar: 148 calories - 4g fat - 20g carbs - 8g protein

Preparation Instructions

  • Preheat oven to 150°C/300°F.

  • Line the base of a 15x15cm baking tin with baking paper.

  • Crack the eggs into a large bowl.

  • Add the protein powder / sweetener, vanilla extract, cinnamon, sea salt, baking powder, milk, mashed strawberries and oats and stir well.

  • Stir in the blueberries.

  • Distribute the apple slices evenly around the base of the baking tin.

  • Pour the oat mixture into the tin and press down firmly to compact the mixture.

  • Bake for 25-30 minutes or until the mixture is firm.

  • Remove from the oven and allow to cool for 10 minutes.

  • Cut into 9 bars

  • Serve

  • Store any leftovers in an airtight container and refrigerate for up to 3 days

  • Or freeze on same day.
