Ingredients (Serves 2)
1 tbsp olive oil
½ tsp ground black pepper
¼ tsp medium chilli powder or paprika
¼ tsp sea salt
1 tsp honey
2 tbsps fresh lemon juice
A large handful of rocket leaves (or use salad leaves of your choice)
½ red onion thinly sliced
A handful of cherry tomatoes, halved
100g sweet apple, thinly sliced
15g pistachios, chopped
100g mozzarella balls, sliced or torn

Preparation
Place the oil, black pepper, chilli powder, salt, honey and lemon juice in a small bowl and stir well
Place the rocket leaves in a serving bowl
Top with the onion, tomatoes, apple and pistachios
Toss together and top with the mozzarella
Drizzle the dressing over the salad and serve
