Apple And Mozzarella Salad

Ingredients (Serves 2)

  • 1 tbsp olive oil

  • ½ tsp ground black pepper

  • ¼ tsp medium chilli powder or paprika

  • ¼ tsp sea salt

  • 1 tsp honey

  • 2 tbsps fresh lemon juice

  • A large handful of rocket leaves (or use salad leaves of your choice)

  • ½ red onion thinly sliced

  • A handful of cherry tomatoes, halved

  • 100g sweet apple, thinly sliced

  • 15g pistachios, chopped

  • 100g mozzarella balls, sliced or torn

Nutrition

  • Per Serving: 305 Calories, 18g Carbs, 11g Protein, 21g Fat

Preparation

  • Place the oil, black pepper, chilli powder, salt, honey and lemon juice in a small bowl and stir well

  • Place the rocket leaves in a serving bowl

  • Top with the onion, tomatoes, apple and pistachios

  • Toss together and top with the mozzarella

  • Drizzle the dressing over the salad and serve
