Apple Chai Porridge

Ingredients (Serves 1)

  • 60g oats (use gluten free if preferred)

  • 200ml unsweetened almond milk (or use milk of your choice)

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground ginger

  • 1 tsp vanilla extract

  • 40g apple, finely chopped

  • 25g vanilla flavour whey or plant-based protein powder (optional)

For The Topping:

  • 5g pecan halves

  • 15g apple, sliced

  • A sprinkle of ground cinnamon

  • 1 tsp maple syrup

Nutrition

  • Per Serving: 451 Calories, 58g Carbs, 30g Protein, 11g Fat

Preparation

  • Place the oats and milk in a saucepan over a medium flame

  • Cook for 4-5 minutes, stirring frequently until thick and creamy

  • Add the cinnamon, nutmeg, ginger and vanilla extract and stir well

  • Add the apple and cook for 2 minutes

  • Remove the saucepan from the heat and leave for 5 minutes

  • Add the protein powder (if using) and stir rapidly, until smooth

  • Transfer to a bowl, add the toppings and serve
