Ingredients (Serves 1)
60g oats (use gluten free if preferred)
200ml unsweetened almond milk (or use milk of your choice)
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 tsp vanilla extract
40g apple, finely chopped
25g vanilla flavour whey or plant-based protein powder (optional)
For The Topping:
5g pecan halves
15g apple, sliced
A sprinkle of ground cinnamon
1 tsp maple syrup

Preparation
Place the oats and milk in a saucepan over a medium flame
Cook for 4-5 minutes, stirring frequently until thick and creamy
Add the cinnamon, nutmeg, ginger and vanilla extract and stir well
Add the apple and cook for 2 minutes
Remove the saucepan from the heat and leave for 5 minutes
Add the protein powder (if using) and stir rapidly, until smooth
Transfer to a bowl, add the toppings and serve
