Ingredients (Serves 2)
2 tsps avocado oil
80g shallots, finely chopped
300g lean turkey breast mince (or usevlean beef mince)
250g cauliflower florets, finely chopped
1 tbsp garlic, minced
1 tbsp fresh ginger, finely chopped
2 tsps honey
2 tsps sweet chilli sauce
The juice of 1 lime
2 tsps fish sauce
2 tsps soy sauce or tamari
50g baby spinach leaves
1 tbsp fresh coriander, chopped

Preparation
Heat the oil in a large frying pan over a medium flame
Add the shallots and fry for 4-5 minutes, stirring frequently
Add the mince and fry for 2-3 minutes, breaking up with a wooden spoon
Add the cauliflower and fry for 6-8 minutes, stirring occasionally
Add the garlic and ginger and fry for 1 minute, stirring
Add the honey, sweet chilli sauce, lime juice, fish sauce and soy sauce
Stir well and cook for 2 minutes
Add the spinach and coriander. Stir well and cook until the spinach has wilted
Serve with some cooked rice or side of your choice (optional)
