Thai Turkey Scramble

Ingredients (Serves 2)

  • 2 tsps avocado oil

  • 80g shallots, finely chopped

  • 300g lean turkey breast mince (or usevlean beef mince)

  • 250g cauliflower florets, finely chopped

  • 1 tbsp garlic, minced

  • 1 tbsp fresh ginger, finely chopped

  • 2 tsps honey

  • 2 tsps sweet chilli sauce

  • The juice of 1 lime

  • 2 tsps fish sauce

  • 2 tsps soy sauce or tamari

  • 50g baby spinach leaves

  • 1 tbsp fresh coriander, chopped

Nutrition

  • Per Serving: 307 Calories, 19g Carbs, 42g Protein, 7g Fat

Preparation

  • Heat the oil in a large frying pan over a medium flame

  • Add the shallots and fry for 4-5 minutes, stirring frequently

  • Add the mince and fry for 2-3 minutes, breaking up with a wooden spoon

  • Add the cauliflower and fry for 6-8 minutes, stirring occasionally

  • Add the garlic and ginger and fry for 1 minute, stirring

  • Add the honey, sweet chilli sauce, lime juice, fish sauce and soy sauce

  • Stir well and cook for 2 minutes

  • Add the spinach and coriander. Stir well and cook until the spinach has wilted

  • Serve with some cooked rice or side of your choice (optional)
