Ingredients List (Serves 1)

  • 10g Brazil nuts

  • 30g oats (use gluten free if preferred)

  • 5g almonds

  • 5g walnuts

  • 10g pumpkin seeds

  • 70ml unsweetened almond milk

  • 50ml tinned unsweetened coconut milk

  • 1 tsp honey or maple syrup

For the topping:

  • A few chopped nuts

  • A few pumpkin seeds

Nutrition:

  • Per serving: 371 calories, 21g carbs, 11g protein, 27g fat

Preparation:

  • Place the ingredients in a bowl and stir well

  • Refrigerate for 4 hours or overnight

  • Taste and add more maple syrup if required

  • Serve cold or heat in a pan until warm
