300g avocado, peeled and chopped
70g sun-dried tomatoes (drained and chopped)
15g fresh basil, chopped
Juice of 1/2 a lemon
¼ tsp sea salt
¼ tsp ground black pepper
4 slices wholemeal toast

Place the sun-dried tomatoes and avocado in a bowl
Add the fresh basil and lemon juice
