Sun-Dried Tomato And Avocado On Toast

Ingredients List (Serves 4)

  • 300g avocado, peeled and chopped

  • 70g sun-dried tomatoes (drained and chopped)

  • 15g fresh basil, chopped

  • Juice of 1/2 a lemon

  • ¼ tsp sea salt

  • ¼ tsp ground black pepper

  • 4 slices wholemeal toast

Nutrition Info:

  • Per Serving: 258 calories, 7g protein, 26g carbs, 14g fat

Preparation Instructions:

  • Place the sun-dried tomatoes and avocado in a bowl

  • Add the fresh basil and lemon juice

  • Season with salt and pepper and stir gently

  • Spread onto the toast and serve
