Ingredients (Serves 1)
25g vanilla or chocolate flavour whey or plant-based protein powder
½ tsp vanilla extract
120g low fat cottage cheese (use dairy free if preferred)
180g Greek yoghurt (use dairy free if preferred)
2-3 tsps lemon zest, finely grated (use an unwaxed lemon)
30g fresh raspberries

Preparation
Place the yoghurt, cottage cheese, vanilla extract, and protein powder in a blender and blend until smooth.
Transfer to a sealable container and refrigerate for 2 hours, overnight or until set.
Top with lemon zest and berries.
