Ingredients List (Serves 2)
1/2 tsp ghee or olive oil
60g unsmoked pancetta lardons (or use thick cut bacon rashers)
60g red onion, finely chopped
1 garlic clove, minced
300g tinned chopped tomatoes
1/2 tsp ground cumin
1/2 tsp smoked paprika
A pinch of sea salt and ground black pepper
4 free range eggs
A sprinkle of fresh parsley, chopped

Preparation:
Heat the ghee/oil in a skillet or frying pan over a medium flame
Add the pancetta and onion and fry for 4 minutes, stirring occasionally
Add the garlic and fry for 2 minutes, stirring frequently
Add the tomatoes and spices
Stir well and simmer for 10 minutes, stirring occasionally.
Make 4 wells in the mixture and turn the heat to medium/low
Crack an egg into each well
Cover with a lid and cook for 2-3 minutes (or until the yolks are cooked to your liking)
Serve garnished with fresh parsley
