Pancetta Shakshuka

Ingredients List (Serves 2)

  • 1/2 tsp ghee or olive oil

  • 60g unsmoked pancetta lardons (or use thick cut bacon rashers)

  • 60g red onion, finely chopped

  • 1 garlic clove, minced

  • 300g tinned chopped tomatoes

  • 1/2 tsp ground cumin

  • 1/2 tsp smoked paprika

  • A pinch of sea salt and ground black pepper

  • 4 free range eggs

  • A sprinkle of fresh parsley, chopped

Nutrition:

  • Per serving: 261 Calories, 9g Carbs, 18g Protein, 17g Fat

Preparation:

  • Heat the ghee/oil in a skillet or frying pan over a medium flame

  • Add the pancetta and onion and fry for 4 minutes, stirring occasionally

  • Add the garlic and fry for 2 minutes, stirring frequently

  • Add the tomatoes and spices

  • Stir well and simmer for 10 minutes, stirring occasionally.

  • Make 4 wells in the mixture and turn the heat to medium/low

  • Crack an egg into each well

  • Cover with a lid and cook for 2-3 minutes (or until the yolks are cooked to your liking)

  • Serve garnished with fresh parsley
