Ingredients (Serves 2)
125g goats’ cheese
80g ripe tomato, cut into thin wedges
40g red onion, sliced
100g lettuce (any variety), shredded
35g green or black pitted olives, sliced
20g cashew nuts, roughly chopped
For The Dressing
½ tbsp extra virgin olive oil
1 tbsp white vinegar
½ tsp Dijon mustard
½ tsp maple syrup
¼ tsp garlic, minced
¼ tsp sea salt
¼ tsp ground black pepper

Preparation
Place the dressing ingredients in a jug and stir well
Divide the salad ingredients between two bowls
Drizzle the dressing over the top and toss well
Top with the goats’ cheese and serve
