Goats Cheese Salad With Mustard Dressing

Ingredients (Serves 2)

  • 125g goats’ cheese

  • 80g ripe tomato, cut into thin wedges

  • 40g red onion, sliced

  • 100g lettuce (any variety), shredded

  • 35g green or black pitted olives, sliced

  • 20g cashew nuts, roughly chopped

For The Dressing

  • ½ tbsp extra virgin olive oil

  • 1 tbsp white vinegar

  • ½ tsp Dijon mustard

  • ½ tsp maple syrup

  • ¼ tsp garlic, minced

  • ¼ tsp sea salt

  • ¼ tsp ground black pepper

Nutrition

  • Per Serving: 326 Calories, 10g Carbs, 13g Protein, 26g Fat

Preparation

  • Place the dressing ingredients in a jug and stir well

  • Divide the salad ingredients between two bowls

  • Drizzle the dressing over the top and toss well

  • Top with the goats’ cheese and serve
