Coriander And Lime Chicken

Ingredients (Serves 2)

  • 2 x 180g chicken breasts

  • The grated zest and juice of 1 lime

  • 2 tsps olive oil

  • ½ tsp sea salt

  • ½ tsp ground black pepper

  • ½ tsp ground cumin

  • 2 garlic cloves, minced

  • 10g fresh coriander, finely chopped

  • 1 lime or lemon, cut into wedges)

Nutrition

  • Per Serving: 243 Calories, 2g Carbs, 43g Protein, 7g Fat

Preparation

  • Pound the thickest end of each chicken breast with a mallet, until the chicken is a fairly even thickness throughout

  • Place the lime juice, lime zest, olive oil, salt, pepper, cumin, garlic and half of the coriander in a large bowl and stir well

  • Add the chicken and stir well to coat

  • Cover and refrigerate for 30 minutes

  • Air fry in a single layer at 180˚C/350˚F for 6 minutes on each side, or until thoroughly cooked

  • Alternatively, add 1 tsp avocado oil to a skillet and cook over a medium flame for 6 minutes on each side, or until thoroughly cooked

  • Serve garnished with the remaining fresh coriander plus lime or lemon wedges
