Ingredients (Serves 4)
½ tbsp avocado oil or ghee
120g brown onion, chopped
100g cherry tomatoes, halved
½ tsp sea salt
1 large garlic clove, minced
30g fresh spinach leaves
30g basil pesto
150g tomato & basil ready-made (store bought) sauce
250ml cold water
240g orzo pasta
¼ tsp dried Italian seasoning
300g cooked chicken breast, diced
40g mozzarella cheese, grated (use dairy free if preferred)
Fresh basil leaves, to garnish

Per serving: 308 calories, 12g fat, 26g carbs, 24g protein
Preparation
Preheat oven to 200˚C/400˚F.
Heat the oil/ghee oil in an ovenproof skillet over a medium flame
Add the onion and fry for 3 minutes, stirring frequently
Add the tomatoes, garlic and salt and fry for 7 minutes, stirring frequently
Add the spinach, pesto, tomato & basil sauce and water. Stir well
Add the orzo and Italian seasoning and stir well
Add the cooked chicken breast and stir
Bake uncovered for 10-12 minutes, or until the pasta is just cooked
Remove from the oven and top with the mozzarella cheese
Bake for 5 minutes or until the cheese is melted
Serve garnished with fresh basil leaves
